We do believe in the adage of “local is best” and we
hope to continue to supply our family , friends and
customers with all the beef that they can consume at the
local level. However, we are also now offering to ship
our beef to those who can’t get to our local Farmers’
Markets or get here easily to the farm. For those who
want a product that is reasonable, tasty and tender, we
are now offering our beef in select packages via
shipping right to your door. We ship via USPS Priority
Mail east of the Mississippi River.

Our beef is
processed at a USDA processing plant, “abattoir,” less
than one hour from our farm. The beef is dry aged and
hung for 10-14 days to ensure excellent taste and
tenderness. It is then flash frozen and vacuum sealed
and labeled with our USDA label that includes
description and weight. The beef is not gassed or
injected with fluids.
If you feel that
what we have to offer is what you are looking for
regardless of the availability in your area, here is how
you can purchase our product:
1. Payment is by cash or check only here
at the farm. At our Farmers Markets and elsewhere
where cell phone service is available, we accept VISA
and Mastercard with a 2.7% additional charge to cover
merchant services. Payment for shipped orders by credit
card via PayPal only.
2. Wholesale: We offer mixed quarters cut
to our specification and halves and whole
steers cut to your specification.
Our price to you is based on the hanging weight before
custom cutting and includes all processing, packaging
and label costs. You pay US for everything and cut one
check to us. The hanging weight does not include the
weight of the organs but these are for you to take home
if you want them. This price and way of purchasing is
the ultimate great deal and offers so much versatility
to your families’ dining experience. It is also the most
economical way to purchase the beef. Talk with your
family and friends to see if they are interested in
pursuing this avenue and split it amongst yourselves. We
will meet you at the processor to help you pick up your
beef that you have custom cut.

US post. Availability is first come-first serve. This is
the best deal for your beef with a wholesale price. We
do require a small deposit to hold your beef. We have
in-depth ordering instructions for whole and half sides
of beef as well as cut sheets for those desiring this
wholesale option and will be sent to you after receiving
your deposit via email attachment or US post-your
choice; let us know! All repeat wholesale customers can
forgo the deposit if they wish.
3. Farmer’s Markets:

to the last weekend in October every Saturday from
8am-12noon. We also have Holiday Markets on November 17,
2012 and

is the best deal to sample all cuts of meat minus the
prime cuts which you get to order separately depending
on your taste. The $Package usually fills a large
refrigerator freezer and fills two plastic grocery
bags full.
We allow you to order any prime cuts
over this package price that you wish, rather than to
try to guess your culinary appetites. The prime cuts of

6. Restaurants, Deli’s,
Caterer’s and local non-box stores:
We are always open to any ideas from our culinary
friends and will try to work with you on a one to one
basis to make sure that you are fully satisfied. We find
that the most economical route at this level is to
consider the whole and half beef wholesale purchase
option and have it processed to your specification, but
we are always open to suggestion especially if you are
looking at the less prime but actually tastier cuts.
Larger orders of these less prime cuts will ensure a
better retail purchase price through a discount. For a
delivery fee, we will deliver (our frozen product) to
your premises.
7.Local School Systems:
We are now able to supply any
local school or small school system with custom made
burgers for those who are interested in supplying a
100% all- beef patty to their students. We can also

Beef Cuts:
For those wondering what cuts we have to offer through
our retail avenue(s), we offer:
Steaks: all prime
steaks including Flat Irons and Petite Tenders, Flank,
Skirt, Brisket, Chuck Eye, Cube, London Broil, not to
mention the Filets, NY strips, Rib Eyes,
Porterhouses/T-bones and Top Sirloins. At times, we
offer the Hanging Tender. All steaks are cut to 1-inch
thickness.
Roasts:
(deboned, rolled and tied) Chuck, Eye Round, Sirloin
Tip and Bottom Round are usually 2-3 pounds for the
average family.
Ground Burger
is packaged in 1 pound loose packages, or as Burger
Patties (4-pack of
¼-pound
patties).
ALL BEEF
Kielbasa, Bratwurst, Cajun Andouille, Sweet and
Hot Italian, Maple and Sage all Beef Breakfast
grillers- 4 to a pak.-around ¾ pound.
